Ingredients
- 1/2 cup onion chopped
- 1/4 cup green pepper chopped
- 1/2 cup butter melted
- 1 15-oz can creamed corn
- 1 15.25-oz can whole kernal corn do not drain
- 3 eggs beaten
- salt
- pepper
- 1 8.5-oz box Jiffy Corn Muffin Mix must be the Jiffy brand

Instructions
- Preheat over to 350 degrees.
- Saute onion and green pepper in a large pan for about 5 minutes.
- Combine with remaining ingredients, stirring until smooth.
- Transfer the mixture from the pan to a greased casserole dish and bake in the oven for 30-40 minutes (longer baking makes pudding firmer).
